Achat (Thai Cucumber Salad)
Dressing:
1 tbsp vinegar 1 tbsp finely chopped shallots 1 tbsp chopped coriander 2 tbsp finely chopped peanuts
6 oz Spring Roll Sauce note: fresh mint can be substituted for coriander
4 tbsp Spicy Thai Basil Sauce
Chop desired amount of cucumber into thin chunks. Pour some of the salad dressing over top and mix. This is a wonderful side salad for barbequed chicken.
This dressing also a wonderful dip for firm tofu that has been pan fried until the outside is crunchy.
Note: this dressing recipe will make several salads. It can be stored in the fridge for up to 2 weeks. |
